Best Food in the World: Thailand vs Mexico vs Vietnam

The Culinary Bucket List: Top 3 Countries for the Best Food in 2026

Let’s be honest: one of the main reasons we travel is to eat. There is no faster way to understand a culture than by sitting at a local table (or a plastic stool on a sidewalk) and diving into a dish you can't pronounce.

After eating my way across the globe, these three countries stand in a league of their own. If you’re a "foodie" traveler, pack your bags—here is where you need to go in 2026.

1. Thailand: The Perfect Balance

Thailand
Thailand

Thai food is a masterclass in balance. Every bite manages to be sweet, sour, salty, and spicy all at once. Whether you are eating Pad Thai on the streets of Bangkok or a creamy Khao Soi in the mountains of Chiang Mai, the complexity of the flavours is unmatched.

Here is my Thailand post.

Must-Try Dishes in Thailand:

1. Pad Krapow (Holy Basil Stir-Fry)

Forget Pad Thai for a second—Pad Krapow is the actual "national dish" of the locals. It is a fiery stir-fry of minced meat with garlic, chilies, and the star ingredient: Holy Basil.

  • The Secret: It must be served with a "Thai-style" fried egg (Kai Dao) on top—crispy and deep-fried on the edges with a runny yolk.

2. Khao Soi (Northern Thai Coconut Curry Noodles)

Originating in Chiang Mai, this is arguably the most comforting soup on Earth. It’s a rich, fragrant coconut milk curry served with soft egg noodles and topped with crispy fried noodles.

3. Tom Yum Goong (Spicy Shrimp Soup)

The quintessential Thai flavour profile. It’s a spicy soup packed with medicinal herbs: lemongrass, galangal, and kaffir lime leaves.

2. Mexico: The King of Flavor & Tradition

Mexico
Mexico

Forget everything you think you know about "Tex-Mex." Real Mexican food is incredibly diverse. From the smoky Moles of Oaxaca to the fresh Fish Tacos of Baja, the use of fresh corn and vibrant salsas creates pure soul food.

Here is my Mexico post.

Must-Try Dishes in Mexico:

1. Tacos al Pastor

The street food icon of Mexico City. It features pork marinated in dried chilies, cooked on a vertical spit called a trompo.

  • The Signature Move: The taquero flicks a slice of fresh pineapple from the top of the spit directly into the taco.

2. Mole Poblano

The most sophisticated sauce in the world. Mole Poblano is a thick, dark sauce made from over 20 ingredients, including spices and Mexican chocolate.

3. Chiles en Nogada

The most patriotic dish in Mexico. A large poblano chili stuffed with meat and fruits, covered in a velvety walnut-based sauce (Nogada).

3. Vietnam: The Master of Freshness

Vietnam
Vietnam

Vietnamese food is all about contrast: hot and cold, crunchy and soft. It’s arguably the "healthiest" cuisine because of the heavy use of fresh herbs and clear broths.

Here is my Vietnam post.

Must-Try Dishes in Vietnam:

1. Phở (Beef or Chicken Noodle Soup)

The heartbeat of the country. A proper Phở takes over 12 hours to prepare, creating a clear, fragrant broth.

2. Bún Chả (Grilled Pork with Vermicelli)

Originating in Hanoi, it consists of grilled fatty pork served in a bowl of warm dipping sauce with white rice noodles.

3. Bánh Mì (Vietnamese Baguette)

A crispy baguette smeared with pâté and stuffed with meats, pickled daikon, carrots, and cilantro.

Honorable Mention: How to Eat Safely

I know what you're thinking: "Will I get sick?" My rule for 2026 is simple: Follow the crowds. If a street stall has a long line of locals, the food is fresh. Avoid empty restaurants and always drink bottled water.

Final Thoughts

Choosing between these three is almost impossible. Thailand wins for spice, Mexico wins for comfort, and Vietnam wins for freshness. My advice? Try them all!
